Since People for Green Justice has started, my friends like to give me tips, pass on information, or in some cases draw cartoons to illustrate the absurdities of so called green ideas. I particularly enjoyed this cartoon. Can’t wait for more!

I just came across SXSW Eco and am super excited about it! It’s 3 days in Austin, Texas dedicated to finding solutions for a sustainable world.
Here’s more info from their site:
SXSW Eco is a three-day conference acknowledging the need for a concerted, cross sector approach to solving recognized sustainability/environmental challenges. The inaugural edition of SXSW Eco will be held October 4-6, 2011 at the Hilton Hotel in Austin, Texas.
Hosting an international audience of executive level decision makers from the public and private sectors, and thought leaders from academia, this event will evolve the environmental conversation beyond rhetoric and towards solutions. That’s right, I’m training for the LA Marathon and fundraising for Kitten Rescue. I’ve run two half marathons but never a full. I start training this month. Got new running shoes and everything! Kitten Rescue has a goal of $50,000. I’d love to see that goal hit and even surpassed to save the lives of so many animals. Kitten Rescue is a non-profit, no kill, volunteer run organization. They place approximately 1,000 cats and kittens into homes every year.
There are many ways you can show your support. One is sponsoring me in the marathon. All the money I raise goes directly to Kitten Rescue and is tax deductible. Check out my fundraising page and give what you can. Every bit helps to save more animals.

If you want to get even more involved and are in the Los Angeles area, you can be a foster caregiver or volunteer at the facility. I’ve volunteered a few times, usually socializing the feral cats and giving the general kitty residents lots of attention. There are some real sweethearts in there that have never had human interaction, have been mistreated or abandoned. Kitten Rescue gives them a second chance at life. Go to their volunteer page to learn more about how you can lend a hand. You might even decide to adopt. Check out the adoption page to learn more.
Bottom line – it’s a great cause however you decide to support. Go Team Kitten Rescue!

I’m a huge fan baked goods and these muffins look freaking delicious! Meatless Monday gives the best recipes!

The burst of blackberries and crunch of walnuts stand out even in these hearty whole-wheat cornmeal muffins. Vanilla and cinnamon gives these breakfast pastries a sweetly spiced flavor to compliment their tasty texture. This recipe comes to us from Jen of Domestic Divas.
Serves 10
- a little oil or nonstick cooking spray, for preparing the pan
- 1 cup cornmeal
- 1 cup whole wheat spelt flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup almond or rice milk
- or
- 1 cup nonfat milk
- 1/4 cup olive oil
- 1 teaspoon vanilla
- 1 cup fresh blackberries
- 1/2 cup walnuts, chopped
Preheat the oven to 425 degrees. Prepare muffin tins with a light layer of oil or nonstick cooking spray.
Place the cornmeal, flour, baking powder, salt and cinnamon together in a mixing bowl. Stir to combine.
In a separate mixing bowl, whisk together the milk, olive oil and vanilla.
Add the wet ingredients to the dry ingredients and stir to combine, taking care not to over beat. Fold the blackberries and chopped walnuts carefully into the batter.
Spoon the matter evenly into 10 of the prepared muffin cups. Bake for 20-25 minutes, or until a toothpick comes out of the muffins clean and the muffins are golden brown. Serve 1 muffin per person and enjoy!

I really like the store Green for Bedroom and Baby in Thousand Oaks! It’s a bit of a drive for me (and not available for people who live outside of LA), but for all you Angelenos, it’s a great place to help make your bedroom the healthiest it can be.
Several years ago, when I was looking to replace my previous (not very eco) mattress of 13+ years, I hunted high and low for an all-natural option. But here was the dilemma I faced: California state law requires that mattresses must be fire retardant, which is super-toxic. On the other hand, the natural alternative was wool – which wasn’t an option for me either.
That’s when the folks at Green for Bedroom and Baby helped me discover this great organic mattress company named OMI. Now, most of OMI’s mattresses are made with wool, and even though they maintain that they only source their wool from providers who treat their sheep humanely, I still felt uneasy about a wool mattress. After all, the sheep are still sent to slaughter at the end of their lives.
But, this is where OMI stepped it up. It turns out that the legal requirement for mattresses does make allowances in cases where a doctor can verify that there’s a medical excuse, such as an allergy to wool. A friendly chiropractor wrote me a note, which opened the door for Green for Bedroom and Baby and OMI to create a vegan, all-natural, all-healthy mattress for me (as they can do for anyone who has a doctor’s note). I wasn’t an unusual case – all of their mattresses are non-toxic, with no VOCs or Kevlar (a synthetic fabric used in everything from mattresses to armor to racing tires). And, with the proper doctor’s authorization, they are happy to custom-make the mattress wool-free as well.
I also picked up some amazing pillows at Green for Bedroom and Baby. They’re called Kapok pillows and, even though they feel exactly like down (aka feather) pillows, they’re actually eco-friendly and cruelty-free (check out PETA’s article about why we should avoid down or feather pillows here). Kapok is a fiber extracted from the seedpod of the kapok tree, found in the rainforest, so it’s all-natural. I went for the thickest kind, because they squish down pretty quickly and become the softest, yummiest pillows ever! (more…)
