I’ve made my way to Bol, Croatia via a 4 hour train ride, 12 hour odd overnight cruise, an hour ferry to the island of Brac and then an hour bus ride to Bol. All totally worth it as soon as we saw the gorgeous ocean with an amazing backdrop of mountains.
We weren’t sure if Croatian food would accommodate a vegan and a vegetarian, but our first dinner in paradise made us make noises at the dinner table that could be considered inappropriate by some. Our first course, which we are still talking about today, was bruschetta ratatouille. Upon first bite we stopped and looked at each other like we’d just discovered an unfound treasure which shortly turned into the look of a cat protecting it’s tuna fish dinner. We were grateful we had each decided to get our own because the serving was 3 pieces and for sure there would have been a thumb wrestle match to the death for the last piece.
I’ll do my best to describe the flavors and you can try to recreate it for Meatless Monday today. The bread was not that of a hard baguette but a type of olive loaf, toasted the perfect amount so you don’t tear up the roof of your mouth, I hate that. The next layer was a rich black olive tapanade and then topped with diced fresh veggies, pour olive oil to your taste. I could only describe the flavor as the perfect finale of a fireworks show in my mouth. We’ll be getting that a few more times while we’re here, you can count on that! Plus the cute waiter and 2 rounds of grappa on him weren’t too shabby either.
