Europe so far!

Hi green friends!  I´m so sorry for being out of touch for two weeks, but I was having trouble logging into my blog from Europe, but don´t fret, it´s all better now.  I have so many things to share with you about the environmental practices here and will find more time next week to get some writing done.  I´ve had an amazing vegan brunch in Paris, saw a living garden wall on a building and very impressive recycling methods!  I have pictures too, but need to download them somewhere.  Not fluently speaking all the languages of places I am can be quite difficult at times.  But I´m learning a lot.  We are in Barcelona now and heading to Monaco tomorrow.  Speak to you all soon! :)

Green Building Efforts Promoting Sustainability and Health

by Krista Peterson

Many people point out the cost effectiveness and sustainability that come along with green building as being one of its great benefits. Although most people who decide to go green in the building process will benefit from both of these things, a major positive that is often overlooked in green construction are the health benefits of this type of building. Using alternatives in some of the minor aspects of the building process, such as the type of paint and insulation being used can help prevent common health risks, while still being high in sustainability and cost effectiveness. Happy Cow on Meatless Monday

Check out Happy Cow, your healthy eating guide. Now you can search for vegan, vegetarian or veg-friendly restaurants. Use it all the time or as your Meatless Monday tool.  I’m going to be using this a lot in Europe.  AND – they just launched the official Happy Cow iphone app so you can have it right at your fingertips!

Veggie Burger for Meatless Monday!

Usually I try to encourage healthy options for Meatless Monday, not that veggie burgers aren’t healthy, but you know, it’s not a nice raw salad. Every now and then I have to treat myself to one of my favorite things, a cheeseburger. Just now it’s minus the meat. I’ve tried quite a few and it’s really hit or miss. I hate the lentil patty. It’s like baby food. It doesn’t stay in the bun and tends to be a mush like substance.  I like a good solid texture, usually a rice based patty.  So far, these have been the best veggie burgers.

1. Islands Restaurant – I got the Kilahuea with the veggie patty. Jalapeno & black pepper crusted burger w/pepper jack cheese, chipotle aioli, lettuce, tomato & Island Reds.  It’s total glutony and I highly recommend it!

2. Habit Burger - I got the charburger with the veggie patty.  It was completely satisfying!

3. Umami Burger – The Earth Burger is made with a mushroom and edamame patty.  It is seasoned amazingly, but I don’t love the texture.  It kinda falls apart and has the mushiness, but the flavor is so kick ass I can’t ignore it!

So far those are my veggie burger picks!  Don’t worry, I’ll keep on trying ‘em just for you. :)  If you have any veggie burger reviews let me know!

Green in Europe – Any Tips?

I am heading to Europe in just over a week for about 2 months. I will be reporting back to you on all the lovely green things I find along my travels. I’m wondering if any of you have any tips on all things eco in Europe. Or maybe even something you’re interested in finding out. So far there is an all organic eco-friendly b&b I’ve found to check out in Paris. I’ve got to get to researching…
